Happy 2012, fellow canners! It’s time to get back into the swing of things, and this week, we’re back to featuring the weekly photo series. Since it’s a great time for citrus, I thought we’d kick off the year with these satsumas. This picture was taken by Rachel is Coconut & Lime. Courtney H. is our winner for the Can-A-Rama Giveaway yesterday and correctly answered “water bath” to our question: What processing method will our Can-It-Forward Stars teach viewers during the first-ever National Can-It-Forward Day?

According the Demonstration Schedule, posted on the Canning Across America website on July 29th, we wrote:

“As part of the first-ever National Can-It-Forward Day, Canning Across America members will teach the basics of water bath canning and some of the most popular summer canning recipes.
