Based on Chef Besh&#039;s story, I&#039;m inspired to pick up some fresh figs (they&#039;re coming into the farmer&#039;s market now) and try a small batch this weekend. What an inspired way to teach me about a new fruit to preserve!</description>

		<description>I love adore figs and this sounds lovely. I was under the impression that figs have a PH range that is too low-acid to can without added lemon juice. I have read that high sugar recipes might be less risky but I would personally be cautious about canning figs without added acid. Anyone have more info on this?</description>
