Pickled Cucumber Roll-Ups Recipe

Ingredients:

  • Sugar: 2 tablespoons
  • Salt: 1 teaspoon
  • Dill: Fresh, chopped (optional for extra flavor)

Instructions:

  1. Slice the Cucumbers: Use a mandoline slicer or a sharp knife to thinly slice the cucumbers lengthwise. Aim for slices about 2mm thick. They should be flexible but not too thin.

  2. Make the Pickling Solution: In a bowl, mix together vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve. Add in the dill, garlic, and red pepper flakes if using.

  3. Marinate the Cucumbers: Place the cucumber slices in the pickling solution. Ensure they are well coated. Let them marinate for about 30 minutes to an hour in the refrigerator. The longer they marinate, the more pronounced the pickling flavor.
